I havent posted that many recipes but
I think this is one everybody will appreciate.
It's a "one-pot-meal" ready in 60 minutes.
I came across the recipe in the cookbook
"Bahama Mama's Cooking" that Mrs Krink
brought home in May 2002 from the Bahamas.
Made this last night and it is good.
Mama's Best Chicken
1 large chicken, jointed
1 onion, sliced
1 stalk of celery, chopped
3 potatoes, peeled and quartered
1/2 cup of lime juice
3-cups water
2-bay leaves
Hot sauce to taste
Salt and Pepper to taste.
put it all in a big pot with a cover and
turn to medium heat for 1 hour.
I usually take a whole chicken and cut-it-up with
a kitchen shears and pull all the skin off the parts.
Hard to pull the skin off the wings so I usually just
toss them. So you go with 2-leg-thigh pieces and
the 2-breasts. (you can try this recipe with a "cut-up
fryer" from the store with the skin on and see if
it makes any difference. Actually you could put
any pieces of chicken in this pot and it will taste
fantastic). Sometimes you dont have celery on
hand...doesnt make that much difference. What
makes your taste buds wanting more of this
chicken preperation is what the 1/2 cup of
Lime juice does to the "chicken juices".
When its done and you take off the lid,
it's an aroma that stays with you all night
and the house has the same aroma
well into the night. Your personal favorite
hot-sauce addition to the recipe can make
some difference. I just know this "good-eats"
If you are in a horror movie, you make bad decisions, its what you do.
Gotta be that lime juice. And the "hot sauce" pullin' out the chicken's real taste. An hour?
Might take a bit longer at a "simmer" on a stove-top in a pot... Sounds tasty!

Probably gonna need a little more hot sauce eh. Garlic perhaps ?

My "hot-sauce" of choice for the making of "Mama's Best
Chicken" the other night was "Cholula Chili Garlic" hot
sauce. Last thing you do before putting the lid on is
dump a lot of hot sauce on all the chicken parts.
Another great addition to this recipe is "fresh ginger".
I take an inch of fresh ginger, peel-it, slice in half
and smash it and toss it in the pot. A half-cup of lime
juice may take 2-3 limes to make. The results seem
to be the same if you only have 1 lime's worth of juice.
But I encourage the half-cup of lime juice the first
couple times you make it
