Ketchup and catsup are simply two different spellings for the same thing, a modern, Westernized version of a condiment that European traders were introduced to while visiting the Far East in the late 17th century. What exactly that condiment was and where they found it is a matter of debate.

Nobody I know growing up or otherwise called it "catsup"
mainly it preceeded the giving a shit of what the lable said
because it was ketchup.. and ketchup is ketchup. I've always
prefered Heinz Ketchup most of my life but Hunts Ketchup
is what I squirt on my roasted potatoes and onions/garlic
and on my turkey burger melts. Hunts ketchup the best now.
One of my big curiousities going now are those ketchup bottles
that are designed to be "upsidedown already" so no more hitting
the end of a ketchup bottle repeatedly to get the ketchup to
"flow". These upsidedown squeeze bottles of delicious ketchup
have the same problem as the upright..when it comes to
getting that last 1/4 cup of ketchup to come out. No matter
which direction I place the bottle of ketchup, the last 1/4 cup
may need a little water if you want it that bad. Very common
in my growing up days where the family ketchup bottle got to
where us kids thought we "run out of ketchup" and my mom
would take the bottle to the kitchen faucet and add a
little water and like magic there was enough ketchup. Yep..
gettin that last 1/4 cup out needs some knowhow.
