Twice when I've been standing in line at Chipotles and I've seen them make their rice.  It looks like they take regular rice and add several teaspoons of salt, then cilantro, and then lime juice.  Howvever the recipes online are different.

Chipotle's Basmati Rice Recipe

1 teaspoon vegetable oil or butter
2 tsp. fresh cilantro
2/3 cup white basmati rice
1 cup water
1/2 teaspoon salt
1 Lime

In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted. Add rice and lime juice, stir for 1 minute. Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes. Fluff rice with a fork.

Basmati is a long-grained rice, with a fine texture. It can be found in Middle Eastern and India markets, as well as some supermarkets.


The source of this recipe is attributed to Chipolte's Executive Chef (and CEO), Steve Ellis.

It looks like every website copied the same recipe, which isnt what they did in the resturant.  Either way I'm going to start messing around with the rice to see whats best and use it as a side dish to everything that I grill next season.

If you're in the mood to do some cooking, here is a rice recipe
from the "Bahama Mama's" cookbook that I 've made atleast
a dozen times.

BAHAMA RICE

1 medium white onion, diced
2 tbsp butter or oil
1 large carrot, diced
2 green onions, finely chopped
1/4 tsp turmeric
1/2 tsp curry powder
2 cloves
1/8 tsp salt
1/4 tsp pepper
2 cups rice, washed and drained
4 cups water
1 cup frozen peas

Saute' onion in butter until clear. Add remaining ingredients (except water
and peas). Saute' gently for a few minutes, stirring to prevent rice from
burning. Add water, cover and cook 15-20 minutes. Stir in peas.
Cook until rice is tender and liquid is absorbed.

Lately for me it's plain rice with sweet soy sauce dribbled all over it. Yum.

How is it different, Pipes? Their recipe calls for what you said you saw....Maybe they have a simpler way of makin it since they use it so much....

Im burnt out on rice...Fried rice and I are best friends but plain old white rice, no thanks....Every fuckin dish growin up had a scoop of Jasmine rice....Ive had so much of it that my eyes are startin to slant.... evileye

With the dentures, rice has taken a quantum leap over
over anything potatoes. I used to have potatoes with
every meal and now my total potato harvest sits in the
fruit room in garage basically untouched. I can eat french fries,
fried potatoes and onions, hashed browns, but steamed or
boiled or mashed potatoes I can easily dismiss. It's a texture
thing. Rice with a sweet soy sauce I find incredibly good and
makes me forget about potatoes. Don't think I'll be planting
potatoes this spring in my garden...when maybe just a few.

Fuck rice!

Always rice and chicken....rice and chicken....BLEH! Fridays it was rice and fish....

If I can learn to make a decent fried rice dish, I would be in hog heaven...That and that Vietnamese soup called "Pho Bo"

Steamed rice with a sweet soy sauce. Try it.
Fish and rice...I don't know about that. Fish and
potatoes...perfect. Now if you're into the sushi
thing, then rice is a go.

No no no, their recipe says to mix it all before you boil down the rice.  Chipotles takes cooked rice and then mixes it in a bowl.  I've made it a couple times like Chipotle and added minced red onions and it was GOOD! 

I went to the international store and got some Jasmine rice, wonder how that will turn out.

Basmati for dinner, Jasmine for dessert.
Jasmine gets sticky during cooking and that's why
it's great for those desserts dishes.
I don't know how many of you have a rice cooker
(I'm sure I'll find out) but the proper formula for perfect
rice is 1 cup of rice and 1 and a half cups of water.
I've seen many recipes calling for 1 cup of rice and
2 cups of water but they are in error (for a rice cooker).
If you are preparing rice on a stovetop in a pan and are
frying the rice prior to adding water, then the 2 cup ratio
works great and there is a magic minute in the cooking
time where the rice is perfect or stuck to the bottom
of the pot. Rice cookers are a must have.

I just bought a rice cooker last week. It works great. I should have bought one a long time ago. It should cook the Basmati perfect to go along with the black eyed peas tomorrow.
