Mrs Krink brought home this cookbook from the Bahama's
titled "Bahama Mama's Cooking". Lot's of interesting recipes.
One I've made dozens of times is "Mama's Best Chicken".
It's an easy one pot meal that will fill you up no problemo.

It calls for a whole chicken cut up. Now if you want save money,
buy a whole chicken and cut it up youself. If you can't handle
doing an autopsy on a chicken in your kitchen sink, then buy
a pack of skinless chicken breast and a pack of chicken thighs.
Cutting up a whole chicken is easy with a pair of kitchen shears.
First you cutout the backbone (a strip 2" wide) with two cuts
and then cut of each leg/thigh off and then the cut through the
breast. I don't use the wings in this recipe but you can. Then I
rip off the the skin of the cutup parts. It's messy but just
think of the money you saved.

Mama's Best Chicken

1 large chicken, jointed
1 onion, sliced
1 stalk of celery, chopped
3 potatoes, peeled and quartered
1/2 cup of lime juice (usually means 3 limes)
2-3 cups of water
2 bay leaves
hot sauce to taste ( I use about 2-3 tblsp of Tiger Sauce)
Salt and Pepper to taste.

put all ingredients into a pot, cover, and set on a burner with
medium heat for an hour.

The chicken is so tender, the potatoes and onions are magnificient.
If you want to make a salad to go with this, by all means do so.
But if your a meat and potatoes guy, this dish will fullfil your dreams.

Chopped and skinned a whole fresh bird yesterday. Blasted it brown in the a cast iron pan then into the slow cooker. Garden spuds and onion. Juiced 5 limes. Couple of different boutique hot sauces and a few mushrooms . Garlic added towards the end. Very enjoyable. Looking forward to leftovers this aft if the room mate leaves any.

 Maybe. Or a roasted red pepper black bean tomatoey thang might work tu.
