I want some good ham. I heard that in the old days (when uke was old) that the ham hung in the corner of the smokehouse all winter and was smoked several times.. It was dry and good. I remember ham being good when I was young. This watery crap they sell these days just dont get it. So I got a ham, shank half, some cheese cloth, hickory chips and briquettes. Wrapped the ham in cheesecloth and have it smokin in the BBQ. not hot but ust low and slow till the water is gone. I'll let ya know how it turns out!

My mom has a connection for the best smoked ham around. The guy is actually a transplanted Kentuckian ( an actual word i hope ) who really knows what he is doing.

My old man, who is semi-retired, got ahold of an old GE refridgerator, and we turned it into a smoker last weekend. The first ham we did, turned out ok, a little dry, not sure if it was enough water, and too much chips or the apple wood chips,but the second one we did, with cherry wood and instead of plain water, but white wine, white grape juice and some beer and smoked for a shorter period of time was great.! Any smoking pro's here?
