Think everybody loves mashed potatoes. Just about

every family get-together during the holidays features

mashed potatoes and gravy from a turkey or a

chicken or a ham. Big diffence in making enough

mashed-potatoes for one and for 50 guests.

When you have a huge pot filled with potatoes

and water you never know when they are cooked

and they are usually to blame for late dinner along

not enough gravy. In my travels to holiday dinners

everybody fucks-up the easist to get right...mashed-

potatoes. Preparing spuds for group is not the topic

right now, preparing spuds for your dinner tonight

is the topic. Great mashed potatoes for one in 20

minutes. Peel and slice into chuncks a huge Russett

potato or 2 medium ones. Place in a steam-basket

in a pan with a lid and add water and cook for

20-minutes on medium heat. Have a handheld

potato smasher on hand and a spatula. So what

I do is drain the water in the pan and add the

potaoes back. Then I smash them lightly, then

add a splash of milk and 1/2 tsp of either garlic

salt or onion salt, and keep smashing it all til

it looks good.

No reason to not have great mashed-potatoes

everynight.

Secret is to use canned condensed milk and a portion of the hot water drained from the potatoes instead of cold milk from the fridge.

I do the garlic and or onion powder touch, tu. Maybe some lemon pepper. Then sprinkle with coarsely chopped organic fresh baby dill, just before putting it on the table. don't want to "cook" the dill. Going to try the potato water, today.

I've been doing the onion salt/garlic salt and just butter
but I can make chicken-gravy any day of the week.
Good gravy over mashed potatoes is the ultimate
food. Very filling. You can can have 3-things on your
plate...maybe just 2. If its mashed-potatoes and gravy
and some meat, you are going to be "full-filled". Dinner
over and I'm just stuffed. Potatoes are a cheap food
source. Find ways to prepare them for your meals in
other ways. Think I'm over french-fries...I wish.
