I've been dabbling with skyline recipe this off season. I think I got it to were I like it. I'm looking forward to giving chef Briz's recipe a try, but I'm not lookin for a 4 alarm type deal.

Well Briz I've looked through numerous cookbooks and the encyclopedia of herbs and what is correct for a hot pepper is "chili". The Mexican cookbook that I have calls them "chiles". The dish with beans came up "chili" numerous times. I guess it depends where you look for recipes as to what the particular designer of the recipe wanted to name it and how it's spelled. My Chinese and Asian cookbook refers to them as "chillies". My "50 great curries of India cookbook" refers to them as "chiles". It's good that we all know what we are talking about. Basically a pepper or a bean dish that's sets your mouth on fire.

That's the only downside as my wife isnt accustomed to hot foods as big daddy Briz is so its rather tame...I usually have to add about half a bottle of Tobasco to my bowl to get it to taste..

Another alternative is "red pepper flakes" usually cayenne and that's what most Asian resturants use to crank up the "stars" on your order. The Spicy Chicken Teriyaki is loaded with these flakes. It works wonders. Having to excuse yourself to the restroom to blow your nose during a meal of firery chow is a good thing.
