Fresh fish are shipped from Singapore frozen, with the guts and all. When its processed in Boston it gets its fresh by date. If the fish had been processed in Singapore its fresh by date would have been applied there, leaving less shelf time at yer grocers. ( Shipping time would figure in)
Atlantic swordfish are caught by sailors who own thier own boats, and command a high price for thier fish. Usually sold fresh rite off the dock to restaurants etc. Singapore boats are owned by a large company and sailors work for next to nothing. American boats only fish the proper seasons and obey the limits on thier catch. Singapore boats throw huge nets and pull everything usable out till they cant get the deck covers down on the holding tanks.
You can get Atlantic swordfish Troll, but ya gotta pay $$$$ for it, and know where ta go...
Several of the upscale seafood resturants in my locale are advertising Australian Lobster for dinner. Christ all mighty, lobster from 10,000 miles away. Takes a simple letter in the mail 10 days to get to Australia. A package can take several weeks. Somehow lobster can arrive daily. I have to wonder what the postage is on those lobsters. There is nothing cheap coming to and fro from Australia. I've been dealing with it for the last 5 years. Phone calls are expensive, sending mail, sending packages are astronomical in price. They must have sent several tons of frozen in one shipment to keep the patrons happy for the next month or so.
