There is no way you can make gumbo for one but since
"I'm a one" these days, I still enjoy making this delectible
shit. So what if I have leftovers. They freeze well. Only
complaints I have is the regular Andouille Sausage I use
seemed to be lacking somehow. Also the chicken seemed
tougher than it should be. Otherwise it was homecooked meal
from heaven.

Weird thing about gumbo is "where do the onions, celery,
green bell pepper go?". At the end of cooking...not a trace
of the forementioned vegetables. Just a smooth as silk gravy.
Finished off eating this batch in two days. Nothing left for
the freezer.

You and your woman would be welcome for a Gumbo dinner
at my place. You can take whatever is leftover home with you.
I always serve cornbread muffins (with a sugary topping) and
rice. Gumbo is so damn filling. I can get that "full feeling" just
taking a few spoonful samples as I'm cooking it. If you begged,
I'd send you my recipe (or the recipe I got off the internet
from the city of Eunice, Louisiana).
