Think the whole "hot sauce" thing has it's level of usefullness. Over the years, many sauces have come forth that are made by which many would call "mad scientists". I might get argument from some that can appreciate more heat than the basic Cayenne or the tongue/throat blistering from the Habenaro. Tread where you will. Somewhere in the dish you ordered should be some essence of the foodstuff.
