It's pretty easy to make, except for the limes, which we never have. I can't tell the difference when I use vinegar.

 Please let us know how it turns out.  I can't imagine any of those flavors getting into the chicken.  He also uses twice as much sugar and salt as I do, that might be what makes it good.

I wondered if the salt doesn't help leech out the flavor from the vegetables? I've tried a few premixed brines with various spices and liked them less than the simple water-salt-sugar. We'll see..

When we go to the Peruvian chicken places in VA you can taste the cummin. So that's what I use, Salt, Brown sugar, cummin and Tandoori powder.

I can't wait for spring, so I can get back to making curries on the propane burner.

Well I tried that brining method as advertised and while it did impart some subtle flavor I don't feel like the result justified the extra effort (my significant other was more impressed than I was). It would probably be good for someone who didn't like much spice or had food allergies. If I try it again I will add lemons and garlic & dissolve the sugar and salt in some warm water first. It was not too salty at all using a full cup.

I didn't think it would, plus he used alot of vegetables that you barely taste when making soup.
I also made a chicken last week and upped the salt and sugar, it was good.
